Made this for dinner last night and it was delish!!
3 Tbspn olive oil
1 1/2 LBS Russet Potatoes
3 medium garlic cloves minced
4 6 ounce Cod Filets
3 Tbspn unsalted butter cut into 1/4 inch pieces
4 springs fresh thyme
1 lemon, sliced
1. Adjust oven rack to the lower middle position and heat oven 425.
Brush large lined baking sheet w/ 2 Tbspn oil
2. In large bowl, toss potatoes with 2 remaining Tbspn oil and garlic and season with salt and pepper to taste. Shingle the tatters into 4rectangular piles. Roast potatoes in oven for 30-35 min turning sheet once halfway through.
3. Pat fish dry and season with salt and pepper. Carefully place fish skinned side down on top of each potato pile. Top the fish with butter pieces, thyme springs and lemon slices. Bake fish until flaky. (About 15 min)
